Tokyo's Michelin Guide Tokyo 2023 gives its highest three-star rating to 12 restaurants

Mika Omura The latest edition of the Michelin Guide to fine dining in Tokyo gave its highest three-star rating to 12 restaurants -- the same establishments as the previous year.

The Michelin Guide Tokyo 2023, published by Japan Michelin Tire Co., awarded 39 restaurants two stars and 149 restaurants a single star.

The Green Star award was given to twelve establishments, down by two from the previous year.

The system, introduced in 2020, highlights restaurants that reduce food loss and make other efforts to contribute to sustainability.

L Effervescence, a French restaurant in Tokyo's Minato Ward, was given a three-star rating and Green Star recognition, specializes in using seasonal vegetables purchased from producers in and around the capital.

It uses firewood collected from forest thinnings for cooking and supports the preservation of traditional techniques by incorporating earthen walls and mortar into interior design.

At a Nov. 15 news conference, Shinobu Namae said that our lifestyles have lost touch with nature, and we must reconnect with nature.

He said that the gastronomy's goal is to create originality. In gastronomy, we can challenge what is considered not normal in society. The seeds of the solution may be found therein. I like to think about what ingredients I should be incorporating for the health of people and the earth.
